A hearty soup for the win- 5. add onions and cook at low heat to caramelize for
about 8 minutes
ter, black bean and sweet
potato 6. add garlic and cook 2 minutes
7. add bay leaves, cut tomatoes, sweet potato
1 large onion chunks, tomato sauce and water

2-3 cloves of garlic 8. bring to a simmer

2 bay leaves 9. drain and rinse black beans and add to pot

2 tablespoons olive oil 10. add salt and pepper to taste
2 medium sweet potatoes 11. simmer for about 1 hour until sweet potatoes are
softened
1 30 oz can of black beans
12. remove about 2 1/2 cups of soup
3 large tomatoes
13. puree or blend the rest of the soup
1 jar tomato sauce
14. return the reserved soup to the pot and simmer
3 1/2 cups water about 10 minutes more

salt and pepper to taste 15. remove bay leaves

1. cut onion and sweet potatoes into small cubes 16. eat and enjoy with some garlic toast
2. mince garlic 17. soup can be frozen to enjoy later
